Pumpkin Spice Chai Cookies
Ingredients
- 2½ cups all-purpose flour
- ½ Tbsp chai spice
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup softened unsalted butter
- ¾ cup granulated sugar
- ½ cup brown sugar
- 1¼ cups pumpkin puree
- 1 egg
- 1 tsp vanilla extract
Vanilla Bean Glaze
- 1½ cups powdered sugar
- 3 Tbsp heavy whipping cream
- 1 vanilla bean (or pure extract)
Directions
- Preheat oven to 350 °F. Line baking sheets with parchment.
- Whisk flour, chai spice, baking powder, baking soda, and salt.
- Add cream butter, granulated sugar, and brown sugar until smooth
- Add pumpkin, egg, and vanilla. Mix until blended.
- Fold in dry ingredients until dough is thick and sticky.
- Scoop ~1½ Tbsp portions onto baking sheets (leave room to spread).
- Bake 12–15 minutes — edges set, centers no longer wet. Let cool a few minutes on sheet, then transfer to wire rack
- While cookies cool, whisk together powdered sugar, cream, and vanilla to make glaze.
- Dip or drizzle cooled cookies with glaze. Let it dry before stacking or serving.
